Food is personal. It’s tied to comfort, choice, memory and quality of life, which is why dining has become one of senior living’s biggest opportunities to elevate the resident experience. And as consumer expectations continue to evolve, communities have an opportunity to look beyond what’s on the plate and consider how emerging food and beverage trends can inspire more variety, stronger connections and more memorable moments around the table.

David Shoffner, Communications Manager at Pavone Group and its food and beverage marketing agency, quench, was a guest on Varsity’s weekly Roundtable to explore the trends shaping food and beverage and what they could mean for senior living. Below are a few Fresh Perspectives from his discussion.

FOCUS ON TRENDS, NOT FADS

Fads generate short-term excitement, but trends reflect lasting shifts in consumer behavior. Understanding the difference helps organizations make smarter decisions about menu development, marketing investments and long-term dining strategies.

PREMIUM FROZEN CAN EXPAND POSSIBILITIES

Today’s premium frozen products offer culinary teams greater flexibility, consistency and menu variety while helping address labor challenges. Used strategically, they can elevate the dining experience without sacrificing quality.

BEVERAGES HAVE BECOME AN EXPERIENCE

Premium coffee, specialty teas and seasonal beverages are no longer just menu add-ons. A thoughtful beverage program can enhance hospitality, encourage social connection and create memorable moments throughout the day.

DINING CAN BE A POWERFUL COMMUNITY BUILDER

Residents increasingly value connection as much as cuisine. Shared meals, interactive dining experiences and chef-led events help transform dining into one of senior living’s strongest tools for building relationships and community.

SMALL TOUCHES CREATE LASTING IMPRESSIONS

Creating a premium dining experience doesn’t always require a larger budget. Thoughtful presentation, seasonal features and simple moments of delight can make everyday meals feel more memorable and rewarding.

BETTER DATA LEADS TO BETTER DINING DECISIONS

Communities already collect valuable dining information. Using that data to anticipate resident preferences, improve menu planning and reduce waste creates a more efficient operation and a dining experience that better reflects what residents want.

VARSITY’S FRESH PERSPECTIVE

Consumer food trends often become resident expectations. Communities that thoughtfully adapt those trends can differentiate their dining experience while creating meaningful moments that support hospitality, connection and quality of life. The goal isn’t to follow every trend, but to identify the ones that genuinely enhance the resident experience.

The food and beverage world is evolving fast—but not everything trending on TikTok deserves a spot on your menu. In a recent Roundtable session, Sonya Cooper, Senior Brand Strategist with Pavone Group’s food and beverage agency quench, shared highlights from the 2025 Food & Beverage Trends report.

Her focus? Helping senior living professionals distinguish between fleeting fads and meaningful trends with staying power. Through twelve insightful trend themes, Sonya explored how emerging consumer behaviors—driven by transparency, personalization, and sustainability—are shaping expectations and creating new opportunities for innovation in dining.

ADAPTIVE DINING IN SENIOR LIVING ENHANCES RESIDENT WELLNESS

Monitoring and responding to dining trends in senior living is crucial for enhancing resident satisfaction and well-being. By integrating trends like personalized nutrition and functional foods into meal programs, senior living facilities can cater to evolving dietary preferences and health needs, fostering a vibrant and health-focused dining experience.

CONSUMER TRENDS FOCUS ON TRANSPARENCY AND PERSONALIZATION

Modern consumers demand transparency about food sourcing and ethics, driving innovations in packaging and clear labeling. There’s a growing preference for clean labels and convenient, sustainable options like refilleries. Personalized nutrition, fueled by genetic testing and customizable meal kits, empowers consumers to tailor diets to their lifestyles. Additionally, the “Second Chance Foods” trend highlights sustainability by repurposing food waste, underscoring a commitment to environmental responsibility.

EMOTIONAL FOOD TRENDS

Today’s consumers are drawn to the emotional experiences food offers, inspired by social media’s global flavor exposure. “Snackification” leads eating habits with flexible snacking options, while “Culinary Passports” introduce diverse international flavors. The “Mini Revolution” offers convenient, portion-controlled mini items, and “Branded Fusion” boosts engagement through creative brand partnerships. “Experiential Dining” transforms meals into immersive experiences, with boomers particularly eager for adventure in dining.

PHYSICAL WELLNESS FOOD TRENDS

The “Body” category trends focus on the physical benefits of nutrition, adopting a holistic view of health beyond weight loss. “Gut Health” emphasizes the microbiome’s role, with Americans seeking gut-friendly foods across various categories. The “Appetite Adjustment” trend sees changes in eating habits due to GLP-1 drugs, pushing demand for nutrient-dense, low-calorie options. “Dream State” centers on enhancing sleep, with foods playing a role. Lastly, “Smart Sips” highlights the growth of functional beverages offering energy, immunity, and mental clarity.
